Well, this is sort of a weird week to be posting a meal plan!
I’m currently in Shanghai, but I’ll be back mid-week which means I’ll be back in the kitchen by no later than Thursday morning. (Ahem, yeah right)
Oh well, you know what they say… if you fail to plan, then you plan to fail!
I like to have a plan, even if it doesn’t work out exactly as I expect it to.
Since I’ll be gone the first part of this week, I’ll just let you pick through the archives and come up with a few options for easy dinners for Monday, Tuesday, and Wednesday.

I will be sleeping in VERY late, then waking up and making one of my Sweet Potato Power Bowls. This is my go-to breakfast at home, and I know I’m going to miss it after having been away for so long.
Lunch – I’m going to have a big bowl of this guacamole. No ragrats, ya’ll.
After the guacamole, I’m going to make a batch of these Oh Henry! copy-cats. Mostly because I just saw them and now I feel like I have to have them. Obviously won’t be needing to make dinner plans after that. Maybe I’ll unpack my suitcase and do some laundry.
After all that air travel, I’m making myself an Immune Boost Juice to help me get through the weekend.
I’ll likely need to run some errands this day, so I’ll plan to eat lunch while I’m out and about. There’s a great taco cart near my house!
For dinner, I’m going to make this beautiful Orecchiette with Brussels Sprouts and Bacon (no bacon on mine, of course).
After dinner, I’m praying it will be warm enough to sit out on the patio and sip on a few of these Coconut and Pineapple Coolers. YAS PLZ.
I’m anticipating I’ll be craving some greasy food and a bloody mary this morning, so let’s do the exact opposite and make granola!
For lunch, I’m thinking cheese… with a few vegetables underneath it (otherwise known as Horiatiki, or classic Greek Salad).
For some reason I’m just guessing that I’m going to be craving cheese when I get home from China.
Vegetarian Eggs Benedict for breakfast is going to be epic. Avocado on everything, k-thanks.
At lunch time I’ll make a huge pan of my Veggie-Loaded Chow Mein and eat the leftovers for dinner.
I just know I’ll be in the mood for Americanized Chinese food just as soon as I get home!
