Chicken Pesto Pizza

This Chicken Pesto Pizza recipe is quick and easy to make, with a delicious flavor from the basil pesto sauce, chicken, artichoke hearts, cherry tomatoes, red onion, Kalamata olives and lots of mozzarella cheese!

This recipe for Chicken Pesto Pizza is so easy to make and comes together in just a few minutes, which is so helpful for a busy weeknight meal.

While this makes one 12″ pizza and six slices, it is easy to double the recipe and feed a family of four or more.

I typically just grill chicken breasts for the chicken, slice them up and season them with a little salt and pepper.

However, you can use left over rotisserie chicken or even chicken breast chunks from a can that are already cooked for an even faster weeknight meal.

You can use the red cherry tomatoes, but I love using the petite medley snacking tomatoes from my local grocery store because they contain red, orange and yellow tomatoes and they give such great color to the pizza. Here is what that package looks like:

Sometimes, we sprinkle a little salt and pepper on the tomato halves before putting them on the pizza, so if you like a little salt and pepper on your tomatoes, give it a try, but go light on it so that it adds just a hint of spice and does not overpower the fresh vegetable flavors.

How to Make Chicken Pesto Pizza

Here is how to make this easy chicken pesto pizza recipe.

First, assemble your ingredients and do the preparation as needed to cook and slice the chicken breasts, chop the onion, halve the olives and tomatoes and drain the artichokes.

We prefer to use a thin pizza crust to make this a thin crust chicken pesto pizza recipe, but if you like the original crust better, that is okay, it will work just fine in this recipe too.

Preheat your oven to 450 degrees Fahrenheit (230 degrees C).

Place the pizza crust on a baking sheet or pizza stone.

Spread the basil pesto sauce evenly over the pizza crust getting within ½ inch to the edge of the crust.

Sprinkle 1 ½ cups of mozzarella cheese over the pesto sauce and save ½ cup of cheese for later.

Evenly place the chicken strips and artichoke heart pieces on top of the cheese.

Add the halved tomatoes, red onions and olives on top.

Sprinkle the remaining ½ cup of mozzarella cheese over the pizza. This cheese helps hold all of the veggies together when you slice this chicken artichoke pesto pizza.

Bake the pizza for 8 to 10 minutes in the preheated oven until the cheese is melted and lightly browned at the edges of the pizza.

Use a pizza cutter to cut the pizza into 6 slices.

Ingredients

  • 1 12 inch pre-baked thin pizza crust (you can use the original crust if you don’t prefer the thin crust)
  • ½ cup basil pesto sauce
  • 2 cups shredded mozzarella cheese
  • 1 1/2 cups cooked chicken breast strips - cut into bite-sized pieces, seasoned with salt and pepper to taste
  • ¾ cup quartered artichoke hearts - drained
  • ½ cup halved cherry tomatoes - I prefer the medley package that has yellow, orange and red cherry tomatoes for the great colors on the pizza
  • 1/3 cup chopped red onions
  • ¼ cup halved Kalamata olives - drained
