Golden, flaky, and dusted with cinnamon and powdered sugar, this Bougatsa recipe brings a little bakery magic to your kitchen.

Bougatsa dusted with powdered sugar and cinnamon in a baking dish.

This Bougatsa is a classic Greek pastry that pairs crisp, buttery layers of golden phyllo with a rich, creamy custard filling. Each bite delivers a delicious contrast of flaky pastry and soft custard, finished with a dusting of powdered sugar and fragrant cinnamon.

I love this Greek Bougatsa recipe because it is truly a one of a kind dessert you can’t find everywhere. For other fun desserts you have to check out my Crostata, French Apple Cake, and Cranachan.

Expert Tips

Keep the phyllo dough covered – Phyllo dries out quickly and can become brittle. Keep unused sheets under plastic wrap or a lightly dampened kitchen towel while assembling the pastry.

Watch the color of the pastry – Look for a deep golden-brown, crisp top rather than relying only on the baking time. Ovens vary, and a pale crust may lack that signature flaky crunch.

Let the Bougatsa rest before slicing – Allow it to cool for approximately 20–30 minutes so the custard has time to set. Cutting it immediately after baking can cause the filling to spread.

FAQs

Is Bougatsa the same as Galaktoboureko?

Both can feature phyllo dough and custard, but galaktoboureko is soaked in sweet syrup after baking. Bougatsa is usually served without syrup and dusted with powdered sugar and cinnamon.

Is Bougatsa served warm or cold?

It can be served either way! I love when it is warm out of the oven but be sure to give it enough time to cool so you can slice it.

Why is my Bougatsa soggy?

Excess moisture from the custard or underbaked phyllo can make the pastry soft. Make sure the custard is properly thickened before assembling, use butter between the phyllo layers, and bake until the pastry is thoroughly golden and crisp.

Storage Information

You can store any leftovers of this Bougatsa in an airtight container in your refrigerator for 3-4 days. For longer storage you can freeze leftovers in your freezer for up to 2 months. Note the texture of the custard and phyllo dough might change after thawing.

To reheat you can do so in the oven at 350 degrees Fahrenheit for 10-15 minutes or in the microwave until everything has warmed through.
