Oh. My. Deliciousness!!!! I wound up making a rather variation of, like, 3 of these (baked, fish, chicken poblano) for a taco bar. Sauteed up onion/poblano/habanero, into a cooked “slaw.” But I am doggone sure gonna make every. single. one. of these! Freaking love both flour and corn variations, and LOVE that there are the options for different dietary restrictions/religious restrictions! Vegan can do hash brown; vegetarian can do vegggie. Muslim can do chicken. I mean, we have ALL of these folks in our family, so I’ve done pressure cooker pork, flank steak slice thin (which shreds beautifully after a pressure cooker!!! Seriously!!!). These variations, from citrus to smoky, are simply wonderful!!! And I’m so excited to have additional variations. I have loved so many, SO MANY of your posts (!), and this one is OTT (Over The Top – it’s a soccer/futbol thing!). Anyway, I bookmarked the post so I can return to it, again, and again!!! Because I will use these recipes OFTEN!!! I use a pastry cutter when making guacamole; it takes, literally minutes: cut the avocados; scoop with spoon; 1 capfull of lemon or lime juice per avocado, and salt to taste. Diced tomato and minced cilantro to taste, if that’s your bag. But Ever. Single. One. of your recipes is freaking awesome, so very authentic to the times I spent in Juarez, Mexico, and Zacatecas, plus the months I spent in Guatemala… I can’t speak more highly and I’m so grateful. I realize this may be an overly-emotional post, but I’ve recently reconnected to some of my friends from these previous years (who knew? Facebook is actually good for something…!) and I happened to be feeling nostalgic when your post came through!!! Anyway, it’s all good, and I highly recommend! Every recipe can be adapted for dietary restrictions without losing quality or taste!!! Keep the amazing recipes coming; I should post more often, tbh, but this was one I couldn’t pass up!!! Your travels feel similar to my own, and somehow, through the sharing of familiar recipes, I almost feel I know you.
