How to Make Chicken Massaman Curry
Step #1: Heat the oil in a large Dutch oven or large skillet over medium high heat.
Step #2: Add the chicken and cook for 4-5 minutes until lightly browned on the outside. The chicken does not need to be fully cooked through. Transfer to a plate and set aside.

Step #3: Next, reduce the heat to medium, add the Massaman curry paste and stir constantly for about 1 minute, until fragrant and slightly darkened.

Step #4: Pour in about ½ cup of the full-fat coconut milk and stir until the paste dissolves into a smooth sauce.

Step #5: Next, add the remaining coconut milk, chicken stock, fish sauce, tamarind, and coconut sugar and whisk until smooth.

Step #6: Return the chicken to the pot along with the yukon gold potatoes and onion and bring to a gentle simmer.

Step #7: Partially cover with the lid slightly ajar and simmer for 25-30 minutes, stirring occasionally. The potatoes should be fork-tender and the chicken fully cooked and the sauce should reduce slightly and become creamy.

Step #8: Next, remove from the heat and stir in ½ of the peanuts and lime juice.

Step #9: Finally, serve over jasmine rice and garnish with cilantro and additional peanuts if desired and enjoy!
